Description

These homemade lemon crumb bars combine a buttery crumb base with a sweet and tart lemon filling, making them a delightful dessert perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a medium mixing bowl, combine the flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press 2 cups of the crumb mixture firmly into the bottom of the prepared pan. In a separate bowl, whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, and baking powder until smooth. Pour over the crumb base and spread evenly. Sprinkle remaining crumb mixture on top.
  4. Bake for 20-25 minutes, or until the top is golden brown. Allow to cool in the pan before cutting. Dust with powdered sugar before serving.

Notes

Serve with whipped cream or vanilla ice cream. Store in an airtight container for up to a week at room temperature or two weeks in the refrigerator.
