Healthy, customizable granola bars that make for a perfect snack for any occasion.
Ingredients

- 2 cups rolled oats
- 1 cup nuts (almonds, walnuts, or pecans), chopped
- 1/2 cup honey or maple syrup
- 1/4 cup peanut butter or almond butter
- 1/2 cup dried fruit (raisins, cranberries, or apricots)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, combine the rolled oats and chopped nuts; stir to ensure even distribution.
- In a small saucepan over low heat, mix together honey (or maple syrup) and peanut butter until smooth. Remove from heat and stir in vanilla extract and salt.
- Pour the wet mixture over the dry ingredients and stir until well combined. Add dried fruit and mix until evenly coated.
- Press the mixture into the prepared baking dish. Bake for 20-25 minutes or until golden brown. Allow to cool completely before cutting into bars.
Notes
Wrap bars individually for on-the-go snacks. They can also be stored in the freezer for up to three months.
