Description

Healthy, customizable granola bars that make for a perfect snack for any occasion.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pecans), chopped
  • 1/2 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1/2 cup dried fruit (raisins, cranberries, or apricots)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats and chopped nuts; stir to ensure even distribution.
  3. In a small saucepan over low heat, mix together honey (or maple syrup) and peanut butter until smooth. Remove from heat and stir in vanilla extract and salt.
  4. Pour the wet mixture over the dry ingredients and stir until well combined. Add dried fruit and mix until evenly coated.
  5. Press the mixture into the prepared baking dish. Bake for 20-25 minutes or until golden brown. Allow to cool completely before cutting into bars.

Notes

Wrap bars individually for on-the-go snacks. They can also be stored in the freezer for up to three months.
