- 1 cup rolled oats
- 1/2 cup protein powder
- 1/2 cup flour (whole wheat or almond)
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup blueberries
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the rolled oats, protein powder, flour, baking powder, and salt in a large bowl.
- Whisk together the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the blueberries gently.
- Divide the batter among the muffin cups, filling each about 2/3 full, and bake for 18-22 minutes.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
Notes
For added nutrition, consider adding chia seeds or flaxseeds. Store in an airtight container for up to three days.
