Description

Delicious and healthy protein-packed muffins that incorporate juicy blueberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/2 cup flour (whole wheat or almond)
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the rolled oats, protein powder, flour, baking powder, and salt in a large bowl.
  3. Whisk together the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the blueberries gently.
  6. Divide the batter among the muffin cups, filling each about 2/3 full, and bake for 18-22 minutes.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

For added nutrition, consider adding chia seeds or flaxseeds. Store in an airtight container for up to three days.
