Description

Delicious homemade Almond Joys made with coconut, almond butter, crunchy almonds, and dark chocolate. A perfect treat for satisfying sweet cravings.


Ingredients

  • 1 cup shredded coconut
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips
  • 1/2 cup whole almonds

Instructions

  1. In a bowl, mix shredded coconut, almond butter, honey (or maple syrup), vanilla extract, and salt until well combined.
  2. Form the mixture into small bars or rounds and place a whole almond on top of each piece.
  3. Place the formed bars on a parchment-lined baking sheet and refrigerate until firm (about 15-20 minutes).
  4. Melt the dark chocolate chips in a microwave-safe bowl or using a double boiler until smooth.
  5. Dip each bar into the melted chocolate, coating evenly, and let the excess chocolate drip off.
  6. Place back on the parchment paper and let the chocolate set in the refrigerator for about 30 minutes.
