Description
A delightful meal bringing together the spicy kick of Sriracha and the sweetness of honey, packed with protein and served over brown rice or quinoa with fresh greens.
Ingredients

- 4 Salmon fillets
- 2 tbsp Honey
- 2 tbsp Sriracha sauce
- 2 tbsp Soy sauce
- 2 tbsp Lime juice
- 2 cloves Garlic (minced)
- 2 cups Brown rice or quinoa
- 4 cups Mixed greens
- 1 Avocado (sliced)
- 1 tbsp Sesame seeds
Instructions
- Preheat the oven to 400°F (200°C).
- Mix honey, Sriracha, soy sauce, lime juice, and minced garlic to form a marinade.
- Place salmon fillets in a baking dish and pour the marinade over them, making sure they are well coated. Bake for about 12-15 minutes or until cooked through.
- Prepare the brown rice or quinoa according to package instructions. In serving bowls, place cooked rice or quinoa, mixed greens, and sliced avocado. Once the salmon is done, flake it and place it on top. Drizzle remaining marinade over the bowls and sprinkle sesame seeds on top. Serve warm and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in the microwave.
