Description

A delightfully soft and fluffy bread packed with protein, perfect for breakfast or a snack.


Ingredients

  • 2 cups cottage cheese
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup melted butter
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup chopped nuts (optional)
  • Icing (optional: powdered sugar mixed with milk or cream)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
  2. In a large mixing bowl, combine the cottage cheese, sugar, eggs, melted butter, and vanilla extract. Mix well until everything is fully incorporated and smooth.
  3. In another bowl, mix the flour, baking powder, cinnamon, and salt together.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. In a separate bowl, stir together the brown sugar and optional chopped nuts.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle with half of the brown sugar mixture. Pour the remaining batter on top and sprinkle the rest of the brown sugar mixture.
  7. Use a knife to swirl through the batter gently.
  8. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack.
  10. If desired, drizzle icing over the cooled bread before serving.

Notes

For best results, use full-fat cottage cheese and avoid overmixing the batter.
