Ingredients

  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft and fragrant.
  3. Stir in ground turkey and cook until browned, breaking it apart as it cooks.
  4. Add bell pepper, diced carrots, and celery; cook for about 5 minutes until the vegetables begin to soften.
  5. Stir in chili powder, cumin, salt, and pepper, mixing well to combine.
  6. Add diced tomatoes, vegetable broth, kidney beans, and black beans; mix thoroughly.
  7. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, allowing the flavors to meld.
  8. Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
  9. Serve hot, garnished with fresh herbs or a dollop of sour cream if you like!
