- 1 onion, chopped

- 2 celery stalks, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until soft and fragrant.
- Stir in ground turkey and cook until browned, breaking it apart as it cooks.
- Add bell pepper, diced carrots, and celery; cook for about 5 minutes until the vegetables begin to soften.
- Stir in chili powder, cumin, salt, and pepper, mixing well to combine.
- Add diced tomatoes, vegetable broth, kidney beans, and black beans; mix thoroughly.
- Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, allowing the flavors to meld.
- Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
- Serve hot, garnished with fresh herbs or a dollop of sour cream if you like!
