Description

A delightful and moist zucchini bread that uses applesauce for sweetness, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups grated zucchini
  • 1/2 cup applesauce
  • 1/2 cup vegetable oil
  • 1 cup sugar or sweetener of choice
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour or whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, applesauce, vegetable oil, sugar, eggs, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, folding gently. Add walnuts or chocolate chips if using.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes. Check for doneness with a toothpick.
  6. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve warm with butter or cream cheese. Store in an airtight container for up to 3 days or refrigerate for up to a week.
