Description

A delightful plant-based twist on traditional pecan pie, these bars are rich, satisfying, and made with wholesome ingredients, perfect for any dessert lover.

Ingredients

Scale
  • 1 cup pecans
  • 1 cup dates, pitted
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup almond flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a food processor, blend the pecans, dates, oats, and almond flour until a crumbly mixture forms.
  3. Add the maple syrup, melted coconut oil, vanilla extract, salt, and cinnamon. Pulse until well combined and the mixture sticks together.
  4. Press the mixture into the prepared baking dish evenly.
  5. Bake for 20-25 minutes or until golden brown on top.
  6. Allow to cool completely before cutting into bars and serving.

Notes

For extra flavor, consider toasting the pecans before blending. Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
