Ingredients

  • 1 zucchini
  • 1 bell pepper
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • Salt and pepper to taste

Instructions

  1. Begin by slicing your zucchini and bell pepper, and cut the broccoli into florets. Thinly slice the carrots as well.
  2. Heat the olive oil in a large skillet over medium heat until it shimmers slightly. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the prepared zucchini, bell pepper, broccoli florets, and sliced carrots to the skillet. Season with salt and pepper and sauté for around 5-7 minutes until tender yet crisp.
  4. Once cooked to your desired texture, remove the skillet from the heat and serve warm.

Notes

Garnish with fresh herbs like parsley or basil for added flavor. Store leftovers in an airtight container for up to 3 days.
