Ingredients

- 3 cups rice cereal
- 1/2 cup peanut butter or nut butter of choice
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: add-ins like chocolate chips, dried fruit, or nuts
Instructions
- In a large bowl, combine the rice cereal and any add-ins like chocolate chips, dried fruit, or nuts if using.
- In a saucepan over low heat, melt the peanut butter and honey (or maple syrup) together, stirring until smooth.
- Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt.
- Pour the mixture over the rice cereal and mix until everything is well coated.
- Transfer the mixture into a greased 9×9 inch pan and firmly press it down to create an even layer.
- Let the mixture cool and set before cutting into squares, approximately 30 minutes at room temperature or in the fridge.
Notes
Store in an airtight container at room temperature for 5-7 days or refrigerate for longer shelf life. Can be frozen for up to 3 months.
