- 1 ½ cups whole wheat flour
- 1 cup rolled oats
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup honey
- ½ cup yogurt
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups diced peaches (fresh or canned)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the whole wheat flour, rolled oats, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the honey, yogurt, eggs, and vanilla extract until well combined.
- Gently fold the wet ingredients into the dry ingredients until just combined. Fold in the diced peaches.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
For a sweeter muffin, increase the honey by a tablespoon or two. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
