Description

Delightful muffins bursting with juicy peaches, perfect for breakfast, snacks, or dessert. A guilt-free treat packed with wholesome ingredients.


Ingredients

  • 1 ½ cups whole wheat flour
  • 1 cup rolled oats
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup honey
  • ½ cup yogurt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups diced peaches (fresh or canned)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, rolled oats, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the honey, yogurt, eggs, and vanilla extract until well combined.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Fold in the diced peaches.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

For a sweeter muffin, increase the honey by a tablespoon or two. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
