- 2 cups cooked brown rice
- 2 cups cooked, shredded chicken
- 1 cup broccoli florets
- 1 cup low-sodium chicken broth
- 1 cup low-fat milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded low-fat cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked brown rice, shredded chicken, broccoli florets, chicken broth, low-fat milk, garlic powder, onion powder, salt, and pepper. Stir until thoroughly mixed.
- Pour the mixture into a greased 9×13 inch casserole dish, spreading it out evenly. Sprinkle the cheese on top if desired.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until heated through and the cheese is bubbly and golden brown.
- Let cool for a few minutes before serving.
Notes
For a quick option, use rotisserie chicken. This casserole can be made ahead and stored in the refrigerator for up to a day before baking.
