Ingredients

  • 1 cup natural peanut butter
  • 1/4 cup honey
  • 1/4 cup coconut flour
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine peanut butter, honey, coconut flour, salt, and vanilla extract until well mixed.
  2. Form the mixture into small balls and place them on a parchment-lined baking sheet.
  3. Chill in the refrigerator for about 30 minutes.
  4. In a microwave-safe bowl, melt dark chocolate chips and coconut oil until smooth.
  5. Dip each chilled ball into the melted chocolate, covering it halfway.
  6. Return to the baking sheet and let the chocolate set.
  7. Store in the refrigerator.

Notes

For a nut-free version, try using sunflower seed butter instead of peanut butter.
