- 1/2 cup almond butter or peanut butter
- 1/4 cup chopped nuts (e.g., walnuts or almonds)
- 1/4 cup dried fruits (e.g., raisins or cranberries)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, and a pinch of salt. Whisk to mix.
- In another bowl, mix together the mashed banana, honey (or maple syrup), almond butter (or peanut butter), and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and stir to combine. Fold in the chopped nuts and dried fruits.
- Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
