- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- Graham cracker crumbs for layering
- Extra pineapple and coconut for topping
Instructions
- In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Gently fold in the whipped cream until combined, creating a light and airy mixture.
- Add in the crushed pineapple and shredded coconut, stirring gently until evenly distributed.
- In serving jars, layer the graham cracker crumbs, the cheesecake mixture, and top with crushed pineapple and additional coconut.
- Repeat layers until jars are filled, finishing with a layer of the cheesecake mixture on top.
- Chill in the refrigerator for at least 120 minutes before serving to allow the flavors to meld.
