Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

- Mix in the flour, shredded coconut, crushed pineapple, vanilla extract, and salt until well combined.
- Scoop out small portions of dough and roll them into balls, then coat in additional shredded coconut.
- Place the balls on the prepared baking sheet and make a small indentation in the center of each.
- Fill each indentation with a small amount of jam or preserve.
- Bake for about 15-20 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
