Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Add the chopped onion and garlic to the skillet. Sauté until softened, about 3-4 minutes.
- Add the ground beef to the skillet and cook until browned, about 5-7 minutes.
- Stir in the diced potatoes, bell pepper, paprika, salt, and pepper. Pour in the beef broth or water. Cover and cook for 15-20 minutes, stirring occasionally, until the potatoes are tender.
- Garnish with fresh parsley before serving.
