Description

A vibrant dish featuring shrimp marinated in coconut milk, lime, and garlic, perfect for grilling.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup coconut milk
  • 1/4 cup lime juice
  • 1 tbsp lime zest
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Wooden skewers (soaked in water)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a large mixing bowl, combine coconut milk, lime juice, lime zest, honey, garlic, salt, and black pepper.
  3. Add shrimp to the marinade and toss to coat well. Marinate for 30 minutes.
  4. Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers.
  5. Grill the shrimp for 2-3 minutes on each side until opaque and cooked through.
  6. Remove from grill, serve warm, and garnish with lime wedges.

Notes

For a spicier kick, add red pepper flakes to the marinade. Use frozen shrimp if fresh are unavailable, just be sure to thaw them beforehand.
