- 1 pre-made tart crust
- 2 large grapefruits (juice and zest)
- 1 cup sugar
- 2 tablespoons cornstarch
- 3 large egg yolks
- 1 1/2 cups water
- 1 tablespoon butter
- 3 large egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the grapefruit juice, zest, sugar, and cornstarch in a saucepan over medium heat, stirring until thickened.
- Whisk the egg yolks in a separate bowl and gradually mix them into the thickened grapefruit mixture.
- Pour the grapefruit filling into the pre-made tart crust.
- Beat the egg whites with cream of tartar until soft peaks form, then gradually add sugar until stiff peaks form.
- Spread the meringue over the grapefruit filling, sealing the edges.
- Bake for 10-15 minutes until the meringue is golden.
- Cool completely before slicing and serving.
