Description

A delightful dessert that beautifully balances tangy grapefruit with fluffy, sweet meringue atop a crisp tart shell.


Ingredients

  • 1 pre-made tart crust
  • 2 large grapefruits (juice and zest)
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 3 large egg yolks
  • 1 1/2 cups water
  • 1 tablespoon butter
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the grapefruit juice, zest, sugar, and cornstarch in a saucepan over medium heat, stirring until thickened.
  3. Whisk the egg yolks in a separate bowl and gradually mix them into the thickened grapefruit mixture.
  4. Pour the grapefruit filling into the pre-made tart crust.
  5. Beat the egg whites with cream of tartar until soft peaks form, then gradually add sugar until stiff peaks form.
  6. Spread the meringue over the grapefruit filling, sealing the edges.
  7. Bake for 10-15 minutes until the meringue is golden.
  8. Cool completely before slicing and serving.
