Ingredients

  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup chopped pecans
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. Combine the flour, baking powder, and salt in another bowl. Gradually fold this dry mixture into the creamed mixture, being careful not to overmix, then gently incorporate the chopped pecans.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Dust the cooled cake with powdered sugar before slicing and serving.

Notes

For a richer flavor, try using half brown sugar and half granulated sugar, or add cocoa powder for a chocolate variation.
