- 1/4 cup butter, melted
- 2 tablespoons sugar
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped cream
- 2 cups strawberries, sliced
- 1 cup strawberry gelatin
- 2 cups boiling water
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed gluten-free pretzels, melted butter, and sugar until well mixed. Press this mixture firmly into the bottom of a greased 9×13 inch baking dish. Bake for 10 minutes and then allow the crust to cool completely.
- In another bowl, mix the softened cream cheese and powdered sugar until smooth and creamy. Gently fold in the whipped cream until just combined. Spread this mixture over the cooled pretzel crust evenly.
- In a separate bowl, dissolve the strawberry gelatin in the 2 cups of boiling water. Stir until completely dissolved and then let it cool slightly. Fold in the sliced strawberries to the gelatin mixture.
- Pour the strawberry mixture over the cream cheese layer in the baking dish, making sure it covers the entire surface. Refrigerate for at least 2 to 4 hours or until the gelatin is fully set. Serve chilled for the best flavor and texture.
