Description

Ingredients

  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup milk (or a dairy-free alternative)
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.

Notes

For best results, don’t overmix the batter and use a good gluten-free flour blend.
