- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup packed brown sugar
- 3 large eggs
- 1 cup molasses
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- Powdered sugar or festive sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C) and grease and line a jelly roll pan with parchment paper.
- In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. In another bowl, cream the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the molasses. Gradually add the dry mixture until just combined.
- Spread the batter evenly in the prepared jelly roll pan and bake for about 20 minutes or until a toothpick comes out clean. Allow to cool completely.
- Whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Spread the whipped cream over the cooled cake, roll it into a log, and place seam side down on a serving platter. Decorate with powdered sugar or sprinkles.
Notes
For an even spicier flavor, increase the amount of ginger and cinnamon. You can substitute molasses with dark corn syrup.
