Description

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper. Stir well to mix.
  3. Add the chicken thighs and baby potatoes, tossing until well coated.
  4. Arrange chicken skin-side up on a baking sheet, spreading potatoes around them.
  5. Roast for 35-40 minutes or until chicken is cooked through and potatoes are tender.
  6. Serve hot with lemon wedges.
