Description

Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions, sliced for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic to the skillet. Sauté until fragrant and the onions become translucent, about 2-3 minutes.
  3. Stir in the mixed vegetables and cook for a few minutes until they are tender.
  4. Push the vegetables to one side of the pan and add the beaten eggs. Scramble the eggs until fully cooked, then mix them with the vegetables.
  5. Add the cooked rice to the pan and mix thoroughly.
  6. Pour in the soy sauce and season with salt and pepper. Stir-fry for another few minutes until heated through.
  7. Garnish with sliced green onions before serving.

Notes

Use day-old rice for the best texture. High heat helps achieve the smoky flavor typical of fried rice.
