- 1 onion, chopped
- 2 cloves garlic, minced

- 2 eggs, beaten
- 3 tablespoons soy sauce
- Salt and pepper to taste
- Green onions, sliced for garnish
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat until it shimmers.
- Add the chopped onion and minced garlic to the skillet. Sauté until fragrant and the onions become translucent, about 2-3 minutes.
- Stir in the mixed vegetables and cook for a few minutes until they are tender.
- Push the vegetables to one side of the pan and add the beaten eggs. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked rice to the pan and mix thoroughly.
- Pour in the soy sauce and season with salt and pepper. Stir-fry for another few minutes until heated through.
- Garnish with sliced green onions before serving.
Notes
Use day-old rice for the best texture. High heat helps achieve the smoky flavor typical of fried rice.
