- 1 1/4 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 large egg yolk
- 1/4 teaspoon salt
- 1 cup sugar
- 1/2 cup fresh lemon juice
- Zest of 2 lemons
- 3 large eggs
- 3 large egg whites
- 1/2 teaspoon cream of tartar
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the flour, powdered sugar, and salt. Cut in the softened butter until coarse crumbs form. Stir in the egg yolk until the dough comes together.
- Press the dough into a tart pan and bake for 20 minutes or until golden brown.
- Whisk together the sugar, lemon juice, lemon zest, and whole eggs in a saucepan. Cook over medium heat until thickened and bubbly.
- Pour the lemon curd into the baked crust and let it cool completely.
- Beat the egg whites and cream of tartar until soft peaks form, then add sugar gradually until stiff peaks form.
- Spread the meringue evenly over the cooled lemon curd.
- Bake for an additional 10 minutes or until the meringue is golden brown.
- Allow to cool at room temperature before slicing and serving.
Notes
Serve with a drizzle of lemon sauce or whipped cream. Store covered in the refrigerator for up to 2 days.
