Ingredients

  • 1/4 cup maple syrup (or agave syrup)
  • 1/4 cup almond milk
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup flour (whole wheat or all-purpose)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas in a large bowl and mix in the maple syrup, almond milk, oil, and vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture and combine gently.
  5. Divide the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool before transferring to a wire rack.

Notes
