- 1/4 cup maple syrup (or agave syrup)
- 1/4 cup almond milk
- 1/4 cup vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the bananas in a large bowl and mix in the maple syrup, almond milk, oil, and vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and combine gently.
- Divide the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool before transferring to a wire rack.
Notes
Use very ripe bananas for the best sweetness and flavor. Consider adding nuts or chocolate chips for extra texture.
