Description

A delightful stir-fry featuring crispy tofu and colorful mixed vegetables, perfect for quick weeknight dinners.


Ingredients

Scale
  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots, snap peas)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the cubed tofu and cook until golden brown on all sides, about 6-8 minutes.
  3. Remove the tofu from the pan and set aside. In the same pan, add the minced garlic and mixed vegetables. Stir-fry until vegetables are tender-crisp, about 4-5 minutes.
  4. Return the tofu to the pan, add the soy sauce, and stir well to combine. If desired, mix cornstarch with a little water to create a slurry, then add to the stir-fry and cook until the sauce thickens. Season with salt and pepper to taste. Serve hot over cooked rice or noodles.

Notes

Press tofu before cooking for a crispy texture. Customize vegetables based on seasonal availability.
