Description

A quick and easy recipe for heart-healthy salmon cooked in a rich, creamy sauce with cherry tomatoes and spinach.


Ingredients

Scale
  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the salmon fillets with salt and pepper, then add them to the skillet and cook for about 4-5 minutes on each side until golden brown. Remove and set aside.
  3. Add minced garlic to the skillet and sauté for about 30 seconds. Then add cherry tomatoes and spinach, cooking until softened.
  4. Pour in the heavy cream, stir to combine, and add the grated Parmesan, cooking until thickened.
  5. Return the salmon to the skillet, spoon the creamy sauce over each fillet, and heat through for a minute. Garnish with fresh basil and serve immediately.

Notes

For a variation, add lemon juice, fresh herbs, or sautéed mushrooms for extra flavor.
