A quick and easy recipe for heart-healthy salmon cooked in a rich, creamy sauce with cherry tomatoes and spinach.

- 4 salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the salmon fillets with salt and pepper, then add them to the skillet and cook for about 4-5 minutes on each side until golden brown. Remove and set aside.
- Add minced garlic to the skillet and sauté for about 30 seconds. Then add cherry tomatoes and spinach, cooking until softened.
- Pour in the heavy cream, stir to combine, and add the grated Parmesan, cooking until thickened.
- Return the salmon to the skillet, spoon the creamy sauce over each fillet, and heat through for a minute. Garnish with fresh basil and serve immediately.
Notes
For a variation, add lemon juice, fresh herbs, or sautéed mushrooms for extra flavor.
