Description

A comforting dish that transforms leftover turkey into a cheesy, hearty casserole with spinach and rice or quinoa.


Ingredients

  • 2 cups cooked turkey, shredded
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup cooked rice or quinoa
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 3-5 minutes.
  3. In a large bowl, combine turkey, spinach, ricotta, half of the mozzarella, rice or quinoa, salt, black pepper, oregano, and thyme. Mix until fully combined.
  4. Transfer mixture into a greased casserole dish and spread it evenly. Top with remaining mozzarella.
  5. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  6. Let it cool slightly before serving.

Notes

Pairs well with a green salad or crusty bread. Store leftovers in an airtight container for up to 3 days.
