- 2 cups cooked turkey, shredded
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 cup cooked rice or quinoa
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 3-5 minutes.
- In a large bowl, combine turkey, spinach, ricotta, half of the mozzarella, rice or quinoa, salt, black pepper, oregano, and thyme. Mix until fully combined.
- Transfer mixture into a greased casserole dish and spread it evenly. Top with remaining mozzarella.
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
- Let it cool slightly before serving.
Notes
Pairs well with a green salad or crusty bread. Store leftovers in an airtight container for up to 3 days.
