Ingredients

- 1 cup mashed sweet potatoes
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter or oil
Instructions
- In a large bowl, combine the mashed sweet potatoes, milk, egg, vanilla extract, and melted butter. Stir well until the mixture is smooth and fully combined.
- In another bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Heat a non-stick skillet over medium heat and lightly grease it with a little butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, then carefully flip and cook until golden brown.
- Remove the pancakes and keep warm while repeating the process with the remaining batter.
Notes
Serve warm with maple syrup, cinnamon, or fresh fruit. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
