- 1 package of phyllo dough
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- Mix the spinach mixture with crumbled feta, salt, and pepper until well combined.
- Lay out a sheet of phyllo dough and brush with olive oil. Place another sheet on top and brush again.
- Cut the stacked phyllo sheets into strips. Place a spoonful of the spinach and feta mixture at one end of a strip, fold over to form a triangle, then continue folding to create a roll.
- Place the phyllo rolls on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
