Ingredients

- 1 cup couscous
- 2 cups vegetable broth
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
- Squeeze of lemon juice (optional)
Instructions
- In a medium saucepan, bring vegetable broth to a boil.
- Stir in the couscous, then cover and remove from heat. Let sit for about 5 minutes.
- Fluff the couscous with a fork and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the fresh spinach for 2-3 minutes until wilted.
- In a large bowl, combine the cooked couscous, sautéed spinach, halved cherry tomatoes, and crumbled feta cheese. Season with salt, pepper, and lemon juice if desired. Stir gently and serve warm.
Notes
For added flavor, toast the couscous before adding broth. Substitute quinoa or bulgur for a different texture.
