Description

A delicious and nutritious spinach casserole packed with creamy cheeses and fresh spinach, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 cup cooked rice or quinoa
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat a little olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant, about 3-5 minutes.
  3. In a large bowl, combine the sautéed onion and garlic with the chopped spinach, ricotta, mozzarella, Parmesan, eggs, and cooked rice or quinoa. Stir until well mixed.
  4. Season with salt and pepper to taste.
  5. Pour the mixture into a greased baking dish and spread evenly. Bake for 25-30 minutes, or until set and lightly golden on top.
  6. Let the casserole cool slightly before serving.

Notes

For a creamier casserole, you can add a splash of milk or cream. This dish is versatile: add vegetables or use different cheeses for variety.
