- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 cup cooked rice or quinoa
- 1 small onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat a little olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant, about 3-5 minutes.
- In a large bowl, combine the sautéed onion and garlic with the chopped spinach, ricotta, mozzarella, Parmesan, eggs, and cooked rice or quinoa. Stir until well mixed.
- Season with salt and pepper to taste.
- Pour the mixture into a greased baking dish and spread evenly. Bake for 25-30 minutes, or until set and lightly golden on top.
- Let the casserole cool slightly before serving.
Notes
For a creamier casserole, you can add a splash of milk or cream. This dish is versatile: add vegetables or use different cheeses for variety.
