- 2 cups water
- 2 eggs
- 1 tablespoon soy sauce

Instructions
- Rinse the quinoa under cold water to remove any bitterness. Cook according to package instructions using 2 cups of water, then let it cool.
- In a large skillet or wok, heat the olive oil over medium heat. Add the mixed vegetables and sauté until tender, about 3-5 minutes.
- Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble until fully cooked, about 2-3 minutes.
- Add the cooked quinoa and soy sauce to the skillet. Mix thoroughly, ensuring everything is well combined. Season with salt and pepper, then stir in the chopped green onions and serve warm.
Notes
Rinse quinoa thoroughly before cooking to avoid bitterness. Adjust soy sauce to preference, and feel free to swap vegetables based on availability.
