Instructions
- In a large bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, and pumpkin pie spice until smooth and well combined.
- Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side.
- Heat a skillet over medium heat and add a little butter. Once melted, add the soaked bread slices to the skillet.
- Cook them for about 2-3 minutes on each side, or until golden brown.
- Remove the cooked French toast from the skillet and serve warm, drizzle with maple syrup.
Notes
Use thick slices of bread for a more luxurious texture. To make dairy-free, substitute the milk with almond milk or coconut milk.
