Description

A delightful twist on traditional potstickers, this Easy Potsticker Soup combines wholesome ingredients and comforting flavors in a quick 25-minute recipe.


Ingredients

  • 1 package frozen potstickers
  • 4 cups chicken or vegetable broth
  • 2 cups bok choy, chopped
  • 1 cup mushrooms, sliced
  • 2 carrots, sliced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken or vegetable broth to a gentle boil over medium heat.
  2. Once the broth is boiling, add the frozen potstickers to the pot and cook for about 5 minutes.
  3. Stir in the bok choy, sliced mushrooms, and carrots. Reduce the heat and let the soup simmer for an additional 5 minutes.
  4. Add the soy sauce and sesame oil. Taste for seasoning and add salt and pepper as needed. Garnish with fresh green onions before serving.

Notes

For a vegetarian version, use vegetable broth and vegetable potstickers. Leftovers can be stored in an airtight container for up to 3 days.
