- 1 package frozen potstickers
- 4 cups chicken or vegetable broth
- 2 cups bok choy, chopped
- 1 cup mushrooms, sliced
- 2 carrots, sliced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, bring the chicken or vegetable broth to a gentle boil over medium heat.
- Once the broth is boiling, add the frozen potstickers to the pot and cook for about 5 minutes.
- Stir in the bok choy, sliced mushrooms, and carrots. Reduce the heat and let the soup simmer for an additional 5 minutes.
- Add the soy sauce and sesame oil. Taste for seasoning and add salt and pepper as needed. Garnish with fresh green onions before serving.
Notes
For a vegetarian version, use vegetable broth and vegetable potstickers. Leftovers can be stored in an airtight container for up to 3 days.
