Description

Bite-sized salad cups filled with crispy falafel, fresh vegetables, and a creamy dressing, perfect for parties or light lunches.


Ingredients

Scale
  • 1 can garbanzo beans (chickpeas), drained and rinsed
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 1 tablespoon flour (optional)
  • 1 cup mixed greens
  • 1 cup diced vegetables (tomatoes, cucumber, bell pepper)
  • Tahini or yogurt dressing (for serving)
  • Mini pita bread or lettuce leaves (for serving)

Instructions

  1. In a food processor, combine the garbanzo beans, parsley, green onions, garlic, cumin, coriander, salt, and pepper. Blend until a coarse mixture forms, adding flour if needed.
  2. Roll the mixture into small balls and gently flatten them into patties.
  3. Heat oil in a frying pan over medium heat and cook the falafel patties for 3-4 minutes on each side until golden brown and crispy.
  4. Remove from pan and assemble salad cups with mixed greens, diced vegetables, and falafel. Drizzle with dressing before serving.

Notes

Experiment with different herbs or add a spicy kick with cayenne pepper. Store separate components for fresh assembly.
