Description

A delightful dish that combines tender chicken breasts with a zesty lemon and caper sauce, perfect for weeknight dinners or special occasions.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts generously with salt and pepper, then dredge in flour, shaking off excess.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Once melted, add the chicken and cook until golden brown, about 5 to 7 minutes per side.
  3. Remove chicken from skillet. In the same skillet, add lemon juice, chicken broth, and capers, scraping up any brown bits. Bring to a boil.
  4. Reduce heat, stir in remaining butter until melted, then return chicken to skillet and simmer for 2 minutes. Serve with sauce and garnish with parsley.

Notes

Pound chicken to an even thickness for uniform cooking. Use fresh lemon juice for bright flavor. Adjust capers to taste.
