- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup fresh lemon juice
- 1 cup chicken broth
- 1/4 cup capers
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts generously with salt and pepper, then dredge in flour, shaking off excess.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Once melted, add the chicken and cook until golden brown, about 5 to 7 minutes per side.
- Remove chicken from skillet. In the same skillet, add lemon juice, chicken broth, and capers, scraping up any brown bits. Bring to a boil.
- Reduce heat, stir in remaining butter until melted, then return chicken to skillet and simmer for 2 minutes. Serve with sauce and garnish with parsley.
Notes
Pound chicken to an even thickness for uniform cooking. Use fresh lemon juice for bright flavor. Adjust capers to taste.
