Description

A quick and comforting soup made with silky egg ribbons and chicken broth, perfect for busy weeknights or a soothing remedy on chilly days.

Ingredients

Scale
  • 4 cups chicken broth
  • 2 large eggs
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Soy sauce (optional)

Instructions

  1. In a saucepan, heat the chicken broth over medium heat until it simmers.
  2. In a small bowl, mix cornstarch with water to create a slurry, then add it to the simmering broth and stir until slightly thickened.
  3. Beat the eggs in a separate bowl and slowly drizzle them into the broth while stirring gently to create egg ribbons.
  4. Add sliced green onions, season with salt and pepper, and soy sauce if desired. Give it a final stir and serve hot.

Notes

For a vegetarian option, substitute chicken broth with vegetable broth. You can customize the soup by adding cooked shrimp, tofu, or extra vegetables.
