Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 4 cups chicken broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- In a skillet, heat olive oil over medium heat and brown the chicken thighs for a few minutes.
- Place the chicken in the crockpot.
- Add the carrots, potatoes, onion, celery, and garlic on top of the chicken.
- Pour the chicken broth over the vegetables and chicken. Season with thyme, rosemary, salt, and pepper to taste.
- Cover the crockpot and set it to low for 6-8 hours or high for 4 hours. Once cooked, shred the chicken if desired and stir to combine before serving.
Notes
Brown the chicken for enhanced flavor. Customize vegetables based on preference.
