Description

A simple and fulfilling crockpot chicken stew with tender chicken and hearty vegetables, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat and brown the chicken thighs for a few minutes.
  2. Place the chicken in the crockpot.
  3. Add the carrots, potatoes, onion, celery, and garlic on top of the chicken.
  4. Pour the chicken broth over the vegetables and chicken. Season with thyme, rosemary, salt, and pepper to taste.
  5. Cover the crockpot and set it to low for 6-8 hours or high for 4 hours. Once cooked, shred the chicken if desired and stir to combine before serving.

Notes
