- 5 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 325°F (160°C).
- Heat the heavy cream and vanilla extract until just simmering.
- Whisk together the egg yolks and granulated sugar until pale and slightly frothy.
- Add the hot cream to the egg mixture, whisking constantly to avoid scrambling.
- Pour the mixture into ramekins, filling each about three-quarters full.
- Place the ramekins in a baking dish and add hot water halfway up the sides.
- Bake for 30-40 minutes, or until set but still slightly jiggly in the center.
- Remove from the oven and let cool at room temperature before refrigerating for at least 2 hours.
- Sprinkle brown sugar on top and use a kitchen torch to caramelize the sugar.
- Let cool for a minute before serving.
Notes
For best results, refrigerate the crème brûlée for at least 2 hours to set properly. Consider garnishing with fresh berries or mint for an elegant presentation.
