- 4 flour tortillas
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 cup mixed vegetables (bell peppers, onions, spinach, or corn)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the mixed vegetables to the skillet and sauté until tender, about 5 minutes. Season with salt and pepper.
- Place a tortilla in the skillet and sprinkle half with shredded cheese and sautéed vegetables.
- Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown, approximately 2-3 minutes per side. Remove from skillet, slice into wedges, and serve warm.
Notes
Serve with salsa, sour cream, or guacamole. Store leftovers for up to 3 days in the refrigerator or freeze for up to 3 months.
