Description

Delightful and convenient oatmeal cups bursting with sweetness from apples and the warm aroma of cinnamon, perfect for breakfast or a healthy snack.


Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or non-dairy milk)
  • 1 apple, diced
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine the rolled oats, milk, brown sugar, cinnamon, salt, and vanilla extract. Stir until well mixed.
  3. Add the diced apple to the mixture and stir to combine. In another bowl, whisk the eggs and mix them into the oat mixture.
  4. Pour the mixture evenly into the greased muffin tin. Bake for about 20-25 minutes or until the tops are firm and lightly golden. Allow to cool slightly before serving.

Notes

These oatmeal cups can be served warm, at room temperature, or chilled. Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
