Description

Quick and healthy almond-date energy balls for a nutritious snack.


Ingredients

Scale
  • 1 cup almonds
  • 1 cup medjool dates
  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a food processor, combine the almonds, medjool dates, rolled oats, chia seeds, vanilla extract, and salt. Make sure the dates are pitted for best results.
  2. Process the mixture on high speed until everything is well combined and sticky, scraping down the sides as needed.
  3. Scoop out a tablespoon of the mixture and roll it into a ball, about 1 inch in diameter. Repeat until all are formed.
  4. Place the formed balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for about one week. They can be frozen for up to three months.
