Ingredients

- 350 g warm water
- 475 g bread flour
- 50 g brown sugar
- 50 g cocoa powder
- 125 g active sourdough starter
- 11 g salt
- 170 g chocolate chips
Instructions
- Combine warm water and active sourdough starter until well mixed.
- Add the brown sugar, cocoa powder, salt, and bread flour; stir until a shaggy dough forms.
- Knead the dough on a floured surface for about 10 minutes or in a stand mixer for 5-7 minutes.
- Fold in the chocolate chips gently until evenly distributed.
- Place the dough in a bowl, cover it, and let rise for about 2 hours or until it doubles in size.
- Deflate the dough gently, shape it into a loaf, and place seam-side down in a loaf pan.
- Cover the dough and let it rise for another hour while preheating the oven to 375°F (190°C).
- Bake for about 45 minutes or until golden brown and a toothpick inserted comes out clean.
- Cool completely on a wire rack before slicing.
