- 1 cup black beans, rinsed and drained
- 1/2 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
- Blend the black beans in a food processor until smooth.
- Add peanut butter, honey (or maple syrup), cocoa powder, vanilla extract, salt, and baking powder to the processed black beans.
- Stir in the chocolate chips if using.
- Spoon the mixture into the mini muffin pan, filling each cup about 3/4 full.
- Bake for 10-12 minutes, or until a toothpick comes out clean.
- Let cool before removing from the pan and enjoy!
