Description

A moist and tender loaf made with oats and Greek yogurt, perfect for breakfast or a healthy snack.


Ingredients

  • 1 cup Greek yogurt
  • 1 cup rolled oats
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk (or dairy-free alternative)
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine Greek yogurt, rolled oats, flour, honey, baking powder, baking soda, and salt. Stir well.
  3. In another bowl, whisk together the milk and eggs until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick comes out clean.
  6. Let the bread cool for a few minutes before removing it from the pan. Slice and enjoy warm or at room temperature.

Notes

For a gluten-free version, use certified gluten-free oats and flour. Adjust sweetness as desired and consider adding mix-ins such as nuts or chocolate chips.
