Description

Delicious almond cookies with a delightful crunch and soft, chewy center, perfect for tea time or as a sweet snack.


Ingredients

  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • Sliced almonds for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking sheets with parchment paper.
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. In another bowl, whisk together the almond flour, baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring until a cohesive dough forms.
  6. Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Top each cookie with sliced almonds, if desired.
  8. Bake for 10-12 minutes, or until the edges turn golden and the aroma fills your kitchen.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a crunchier cookie, bake a couple of minutes longer. Store in an airtight container at room temperature for up to a week.
